燕麦活性成分保健功能机制研究分析

摘要


燕麦是一种在全球范围内种植的粮食作物和优质谷物。因为富含丰富的营养成分以及多种保健功效,燕麦越来越受到大众的欢迎。β-葡聚糖是燕麦谷物中膳食纤维的重要组成部分。它是燕麦中的主要活性化合物,已被证实能够降低血液中的胆固醇和预防糖尿病。燕麦中还含有其他很多种生物活性化合物,如酚酸、生育酚、甾醇、燕麦皂苷和燕麦生物碱。燕麦已被研究证实对人类健康有益,尽管关于燕麦营养成分和其对疾病影响的研究已有很多论文发表,相关产业和消费者通过研究结果中的临床效果、范围等基础理论方面对燕麦有更深入的了解并掌握发展方向。本文综述了燕麦包含的营养物质及保健功能,为燕麦未来发展提供理论基础和开发方向。
